Creating sign shops
Guide on how to use [Trade] signs
Here is a short guide on how to create and use [Trade] signs - https://wiki.mc-ess.net/wiki/Sign_Tutorial#Trade_Sign
Personally I think the guide could be slightly more indepth so if you have read the information from the above link and are still struggling the information below should fix any remaining issues that you have.
There are 3 different ways that you can use the [Trade] signs, as the creator of the sign you can sell items/blocks for money, buy items/blocks for money and directly trade items/blocks for other items/blocks.

Selling items/blocks for money.

Dirt that costs $100000 for a player to buy
The above sign layout is for a player who creates the sign who wants to sell a product and receieve money, in this example I am will be selling 1 block of dirt for $100000 and will have 10 blocks of dirt in stock before the sign is empty.
The first line of the sign must always be [Trade] or [trade].
The second line is the price of the product, it must have a dollar sign in front of the value ($).
The third line has the amount of the product, the name or item ID of the product and then the total amount of the product that will be in the sign. ('amount' 'product':'total'). 'total' must be more than 'amount' and 'amount' must be a multiple of 'total'. An example of that would be if I had my 'amount' as 5 my 'total' can only be 5, 10, 15, 20 etc and not 6, 7, 14, 18 etc.

Buying items/blocks with money

Players can sell their dirt for $1 each
The above sign is for a player who creates the sign who wants to receieve a product in exchange for money, in this example I will be buying 1 block of dirt for $1 each and I have a total of $100 stored in the sign meaning that the total amount of dirt I can recieve is 100 blocks before the sign is empty.
The first line of the sign must always be [Trade] or [trade].
The second line is the amount of the product followed by the name or Item ID of the product. ('amount' 'product')
The third line has the amount of money a player will receive for putting dirt into the sign followed by the total amount of money that is stored in the sign. (#x27;amount':'total'). 'total' must be less than 'amount' and 'amount' must be a multiple of 'total'. The 'amount' value must also have a dollar sign ($) in front of it but the 'total' value does not require this.

Trading items/blocks for other items/blocks

Players can trade 1 stone for 1 dirt
The above sign is for a player who creates the sign who wants to trade one product for another product without the use of money, in this example I will be trading 1 dirt for 1 stone and I will have a total of 10 dirt stored in the sign meaning the total amount of stone I can receive is 10.
The first line of the sign must always be [Trade] or [trade].
The second line is for the product you want to receive by doing the amount of product you want to receive and the name or Item ID of the product. ('amount' 'product')
The third line has the amount of product a player will recieve for putting stone into the sign followed by the total amount of dirt that will be stored in the sign.('amount' 'product':'total'). 'total' must be less than 'amount' and 'amount' must be a multiple of 'total'.
